Recipe Ingredients for Butternut Squash Penne

2 1tsp Olive Oil
0.25 cup Bread Crumbs, Dry, Grated, Plain
2 cup, cubes Squash, Winter, Butternut
1 tbsp Light Buttery Spread with Flax Oil
4 serving Smart Taste Penne Rigate
2 medium (4-1/8" long) Onions, Spring Or Scallions
0.25 cup Cream, Fluid, Half And Half
0.25 cup Milk, Lowfat, Fluid, 1% Milkfat
0.5 cup, shredded Cheddar Cheese
2 tbsp Parsley, Dried
1 tsp Salt
1 clove Garlic

Recipe Directions for Butternut Squash Penne

  1. Prepare pasta as directed on box.

  2. Drain, toss with oil and set aside.

  3. Peel and de-seed the squash, and then chop. Cook in microwave for 8-10 minutes.

  4. Combine melted butter, garlic, parsley and onion. Add to squash and mash coarsely with a fork.

  5. Add squash and herbs mix to penne, then add cream, milk and cheese. Simmer over low to medium heat until cheese is melted.

  6. Serve topped with a pinch of salt, a generous amount of pepper, and breadcrumbs.
