Recipe Ingredients for butternut squash with pecans and currants

32 oz Squash, Winter, Butternut
0.141 oz Pure Cane Sugar
7 1tsp Olive Oil
3 clove Garlic
0.25 cup Vinegar balsamic
3 oz Currants
1 cup, chopped Pecans
1 tbsp Olive Oil

Recipe Directions for butternut squash with pecans and currants

  1. cut bulb off squash, peel and cut into half inch slices

  2. heat oven to 400

  3. brush squash with 2 tablespoons oil, and sprinkle with salt, pepper and thyme

  4. bake squash 30 minutes, turning after 15 minutes

  5. Meanwhile, saute garlic in 1 tablespoon oil

  6. add sugar and heat til melted

  7. add pecans and cook til toasted

  8. whisk vinegar and remaining oil together, add currents and pour over squash

  9. Serve
