Recipe Ingredients for butternut squash with pecans and currants

32 oz Squash, Winter, Butternut
0.141 oz Pure Cane Sugar
7 1tsp Olive Oil
3 clove Garlic
0.25 cup Vinegar balsamic
3 oz Currants

Recipe Directions for butternut squash with pecans and currants

  1. heat oven to 400

  2. cut bulb off squash and peel

  3. cut into 1/2 in slices

  4. brush with 2 tablespoons oil, and sprinkle with thyme

  5. bake for 15 minutes, turn and bake another 15 minutes

  6. In the meantime, chop garlic and saute in 1 tablespoon oil

  7. add 1 tablespoon sugar and heat til sugar melted

  8. add pecans and saute til roasted

  9. whisk vinegar and remaining oil together and add with currants to pecan mixture

  10. pour pecan-vinegar mixture over squash and serve
