Recipe Ingredients for Butternut Squash & Pecan Bread Pudding

16 ounces bread, french
23 ounce butternut squash
1/2 cup brown sugar
1/2 cup egg substitute
2 large eggs
1 cup evaporated skim milk
1/2 tsp cinnamon
1/2 cup pecans

Recipe Directions for Butternut Squash & Pecan Bread Pudding

  1. Preheat oven to 350 degrees.

  2. Toast pecans for 5 minutes. Cool and rough chop.

  3. Cut french bread into 3/4 inch pieces. Spread on a cookie sheet and toast in oven 20 - 30 minutes or until dry. Whisk eggs and egg substitute, then add milk and butternut squash.

  4. Fold in half of the chopped pecans. Add cinnamon and bread. Let stand for 20 minutes. Pour mixture into a oven safe baking dish that has been sprayed with cooking spray.

  5. Combine remaining pecans with brown sugar and sprinkle on top. Bake 45 minutes to 1 hour or until a toothpick inserted into pudding comes out dry.
