I adapted this recipe for my school's Iron Chef competition.

Recipe Ingredients for Butternut Squash Pasta

2 cups
3/4 large onions
2 tbsp olive oil
2 cup heavy cream
4 oz Parmesan cheese
1/4 tsp salt
1 tsp nutmeg
1/2 tsp black pepper
1/2 pound pasta

Recipe Directions for Butternut Squash Pasta

Chop squash into small cubes and steam until slightly soft. Slice onion. In a large pot with olive oil, sauté onion over medium-high heat until soft. Add squash and cook, stirring until the squash is golden and caramelized. When mixture starts to dry out, add cream. While sauce is cooking, boil pasta. When sauce is reduced and caramelized (approx 20 minutes), remove from heat and blend with immersion blender. Add parmesan cheese, salt, pepper, and nutmeg. Toss with hot pasta.
