Roasted butternut squash soup with grated parmesan cheese and creme fraiche

Recipe Ingredients for Butternut Squash and Parmesan Soup

4 cup, cubes Squash, Winter, Butternut
1 medium bulb raw Fennel
4 tbsp chopped Shallots
2 Serving Vegetable Stock
1 oz Parmesan, Grated Cheese
1 oz Parmesan, Grated Cheese
1 serving Creme Fraiche
1 serving Ground Cumin
1 tbsp Paprika
10 grams Bay Leaves

Recipe Directions for Butternut Squash and Parmesan Soup

  1. Half the butternut squash and rub with half the olive oil on both sides. Add to a roasting tray and season with salt and pepper. Roast for about 30 mins until the skin in blackened. Scoop out the bettrnut squash and discard the skin.

  2. Heat the rest of the oilve oil in a pan and add the onions and fennel. Sweat over a medium heat for 5 mins. Add the cumin and paprika and stir until coated. Sweat for a further 5 mins until softened. Add the butternut squash and cover with water. Add the stock pots and bay leaves. Simmer for 20 mins. Take off the heat and allow to cool. Blend until smooth. Return to the pan and heat. Add the parmesan cheese and creme fraiche
