Recipe Ingredients for Butternut Squash Muffins

1.48 cup all purpose flour
1 tsp baking soda
1/4 tsp salt
1 large banana
1/2 cup applesauce, unsweetened
1 cup shredded butternut squash
4 g butter
8 dates, pitted
0.17 cup sugar
1 tsp vanilla
1 tsp cinnamon
1/2 serving (kirkland signature) organic soymilk plain
3 serving chirardelli bittersweet chocolate baking chips

Recipe Directions for Butternut Squash Muffins

  1. Preheat oven to 350F.

  2. Mix flour, salt, soda and cinnamon together.

  3. In another bowl, cream mashed banana with applesauce and sugar.

  4. Add in milk, vanilla, squash, and chips to wet mixture. Stir to combine.

  5. Add flour mix to wet mix in 3-4 batches.

  6. Stir until just combined.

  7. Spoon into greased muffin pan.

  8. Bake 15-20 minutes.
