Butternut squash muffins (from Jamie Oliver cookbook)

Recipe Ingredients for Butternut squash muffin

200 g butternut squash
170 g dark brown sugar
200 g cornmeal
2 eggs
1 tsp baking powder
1 tsp ground cinnamon

Recipe Directions for Butternut squash muffin

  1. De-seed & roughly chop butternut squash leaving skin on. Finely chop using blender and add all other ingredients and mix together.

  2. Preheat oven to 180 degrees and divide mixture into 8 cake cases and bake for 20 minutes.
