Butternut Squash Mac N Cheese Recipe

A twist on the classic Mac n Cheese.

Recipe Ingredients for Butternut Squash Mac n Cheese

1 lb elbow macaroni
20 oz butternut squash
2 c 1% low-fat milk
1 1/3 c cheddar cheese
2/3 c monterey jack cheese
1/2 c part-skim ricotta cheese
1 tsp salt
1 tsp mustard powder
1/8 tsp cayenne pepper
2 T grated parmesan cheese
2 T unseasoned bread crumbs or oatmeal
1 tsp olive oil

Recipe Directions for Butternut Squash Mac n Cheese

  1. cut squash in half, scoop out seeds.

  2. place cut-side down on foil on baking pan at 325-350 for about an hour or until light brown.

  3. preheat oven to 375.

  4. coat 9x13 baking pan with cooking spray.

  5. cook macaroni until tender but firm (5-8 minutes).

  6. drain and transfer to large bowl.

  7. place cooked / cooled squash with milk in saucepan over low heat, stirring occasionally.

  8. turn heat to medium and cook until mixture is almost simmering, stirring occaisionally.

  9. remove pan from heat and stir in cheeses (except parmesan), salt, mustard, and cayenne pepper.

  10. pour cheese mixture over macaroni and stir to combine.

  11. transfer mac & cheese to baking dish.

  12. combine breadcrumbs, parmesan and oil in small bowl.

  13. sprinkle over top of mac and cheese.

  14. bake for 20 minutes @ 375.

  15. broil for 3 minutes until top is crispy and browned.
