Recipe Ingredients for Butternut Squash & Lentil Crockpot

1 cup lentils
3 3/4 cups water
28 oz. tomato puree
1 cup onion
400 grams butternut squash
300 grams potatoes, red
4 cloves garlic
1 teaspoon olive oil
1 teaspoon cumin
1/8 teaspoon cayenne
1/4 cup red wine

Recipe Directions for Butternut Squash & Lentil Crockpot

  1. Wash the lentils.

  2. Throw in the crockpot with the 2 cups of the water and the tomato puree.

  3. Chop the onion and garlic and saute in the olive oil.

  4. Peel and chop the squash, put in crockpot.

  5. Chop the potatoes and put them in the crockpot.

  6. Add spices to the saute, cook a few minutes more.

  7. Add 1 cup water to skillet to loosen bits, then into the crockpot.

  8. Throw in 3 dried chipotle chilies. Sorry I couldn't find them so didn't put them in the recipe.

  9. Cook for 8 to 10 hours on Low.

  10. It got too thick so I added 3/4 cup hot water and some the red wine.
