This hearty squash and rice casserole provides a nice alternative to plain rice side dishes and is healthier than packaged rice mixes.

Recipe Ingredients for Butternut Squash, Lentil and Brown Rice Casserole

1 teaspoon olive oil
1/2 cup chopped onion
1 clove minced garlic
1 tbsp,+crumbled bay leaf
1 tsp,+leaves thyme leaves
1/4 cup white wine
1 1/2 cups butternut squash
2 cups chicken broth
1/4 cup lentils, rinsed
1/2 cup Long Grain Brown Rice

Recipe Directions for Butternut Squash, Lentil and Brown Rice Casserole

Preheat oven to 350⁰. Rinse and look over lentils to remove any debris or small stones, set aside. In an oven proof skillet, sauté onion in olive oil over medium high heat for 5-7 minutes. Add garlic, bay leaf, and thyme as onion softens. Sauté garlic for 1 minute. Add wine to pan and stir mixture until wine cooks off. Stir in squash, broth, lentils, and brown rice. Cover with tight fitting lid and place in oven. Bake for 40-50 minutes or until rice, lentils, and squash are tender. Add additional broth or water as needed. Remove bay leaf prior to serving and season with salt and pepper to taste. Serve with shredded parmesan cheese if desired.
