Recipe Ingredients for butternut squash lasagna

1 small apple, 1/2 inch cubes
3 cups butternut squash, 1/2 inch cubes
2 1/2 tablespoons olive oil
9 cloves garlic
2 1/2 cups frozen spinach
1 1/2 cups vegetable broth
2 tablespoons vodka
2 tablespoons half and half
14 1/2 oz tomatoes
4 oz tomato sauce
1 small onion, chopped
5 1/2 oz lasagna noodles
1 egg

Recipe Directions for butternut squash lasagna

  1. sautee onion and 2 cloves garlic in 1 tablespoon olive oil until translucent

  2. add squash, apple, and veggie broth - bring to a boil and let simmer until squash is tender

  3. puree in blender, add salt and pepper to taste. Mix in egg.

  4. (While squash is boiling). Mince 3 cloves garlic, brown in 1 tablespoon oil with ~1 tsp red pepper flakes.

  5. Once brown, add tomatoes and tomato sauce. Let simmer for ~15 minutes

  6. Add vodka and cream, salt to taste.

  7. (while other stuff is going on) Sautee spinach in remaining olive oil with remaining garlic.

  8. Layer in small casserole as you would a lasagna

  9. Bake at 350deg for ~35-40 minutes
