Recipe Ingredients for Butternut squash kugel

1/2 pound of butternut squash (seeded, cubed and washed)
1 1/2 cups of whole wheat flour
2 teaspoons of baking powder
1/4 teaspoon of salt
2 teaspoons of cinnamon or pumpkin spice
1/3 cup of honey
3/4 cup of skim milk
1 whole egg
1 tablespoon of melted butter

Recipe Directions for Butternut squash kugel

  1. Place the butternut squash into a large pot and cover with salted water.

  2. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 5 minutes.

  3. Drain and allow to steam dry for a minute or two.

  4. Preheat an oven to 350 degrees F (175 degrees C).

  5. Mash the margarine into the butternut squash in a large bowl.

  6. Whisk together the flour, eggs, sugar, and non-dairy creamer in a separate bowl.

  7. Stir flour mixture into the butternut squash.

  8. Spread mixture into a 9x13 inch baking pan. Sprinkle with cinnamon.

  9. Bake in the preheated oven until golden brown, about 1 hour.
