Recipe Ingredients for Butternut Squash, Gratin w Blue Cheese & Sage

600 g butternut squash, (3/4-inch) cubed peeled (2.5 cups, or about 1 lb)
30 g white bread, (about 3/4-oz or 1/2 slice)
4 teaspoons olive oil, divided
1 1/4 cup thinly sliced onion
1 tbsp chopped fresh sage
1/4 tsp salt
1/8 tsp freshly ground black pepper
1 Cooking spray
40 g crumbled blue cheese, (orig recip calls for 1/4 c or 33.75g))

Recipe Directions for Butternut Squash, Gratin w Blue Cheese & Sage

  1. Preheat oven to 400. Steam butternut squash, covered, 10 minutes or until tender.

  2. Place bread in a food processor, and pulse 12 times or until coarse crumbs measure 1/2 cup. Transfer to a small bowl; add 1.5 tsp oil, and toss with a fork to combine.

  3. Heat remaining 2 tsp oil in a large nonstick skillet over medium-high heat. Add sliced onion to pan; saute 5 minutes or until tender, stirring occasionally.

  4. Transfer the onion mixture to a large bowl. Add butternut squash, chopped sage, salt, and black pepper to bowl, and toss gently to combine. Spoon squash mixture into an 8 x 8?inch baking dish coated with cooking spray.

  5. Bake at 400 for 20 minutes. Sprinkle crumbled blue cheese evenly over squash mixture, and sprinkle evenly with breadcrumb mixture.

  6. Bake an additional 10 minutes or until the cheese is melted and crumbs are golden brown.
