Recipe Ingredients for Butternut squash ginger soup

1 1/2 lbs butternut squash
2 cups carrots
4 cups soup stock
2 tablespoons ginger root
1/2 cup onion

Recipe Directions for Butternut squash ginger soup

  1. clean out and then bake squash (slice in half, face down on baking sheet), 375F for about 30mins, until tender, remove skins, cube, set aside.

  2. dice onion and ginger, saute in (spray oil) soup pot until tender.

  3. chop carrots into about 1/2" pieces, toss in with onions, saute about 4-6 minutes. Add stock (i use veg. stock). add squash & cinnamon stick (remove before puree'ing), simmer for 15-20 mins. remove from heat. use stick blender (or blender), puree until smooth.
