Oh so tasty. Haven't tried with the yogurt yet...only with cream. But this is healthier.

Recipe Ingredients for butternut squash/garbanzo curry

3 cups butternut squash
2 tablespoons canola oil
1 medium yellow onion, diced
1 teaspoon minced garlic
2 teaspoons curry powder
2 teaspoons garam masala
1 teaspoon ground ginger
1 teaspoon cumin
1 teaspoon salt
14 1/2 oz canned tomatoes
1/2 cup fat free yogurt
15 oz can chickpeas, rinsed and

Recipe Directions for butternut squash/garbanzo curry

  1. Saute onions and garlic until translucent

  2. Add seasoning and stir for about 1 minute more

  3. Add butternut squash and tomatoes...cook until squash is tender

  4. Stir in yogurt.

  5. Yum.
