I saw these on a vegan recipe website, and they looked incredible. I sprinted to albertsons, and it was well worth the hassle to cut up the squash. :p

Recipe Ingredients for Butternut Squash Fries

4 cups butternut squash, in strips. (peeled and cut into the shape of fries.)
1 tbs. olive oil
1/2 tbs. sea salt

Recipe Directions for Butternut Squash Fries

  1. toss squash strips with olive oil and salt.

  2. bake at 350oF for 10 minutes, turn, then bake for another 15 minutes.

  3. you can top these with anything depending on your mood, I top with herbs and sesame seeds when I want a sidedish or snack, and sugar and cinnamon when I make them for desert. I dip them in peanut butter, roll them in sushi, they're pretty flexible. Watch the oven, the burn easy.
