Smooth soup of roasted butternut squash, apples, and onions, with a great curry flavor. Top with toasted coconut and cashews, and diced banana.

Recipe Ingredients for Butternut Squash Curry Soup

4 c butternut squash
2 large apples
1 large yellow onion
4 c vegetable broth
2 t olive oil
1 salt
1 pepper
1 t curry powder

Recipe Directions for Butternut Squash Curry Soup

  1. Preheat oven to 425.

  2. Cut the squash, onion, and apples into 2 inch pieces.

  3. Toss with olive oil, salt, and pepper, and roast 30-45 mins, until very soft.

  4. In batches, blend the vegetables with broth until smooth, transfer to saucepan.

  5. Continue adding broth until soup reaches desired consistency.

  6. Add curry, salt and pepper to taste.
