A spicy and tangy soup, low in calorie and very filling.

Recipe Ingredients for Butternut Squash Curry Soup

2 tbsp Olive Oil
1 medium (2-1/2" dia) Onions
4 cloves, raw Garlic
40 oz Squash, Winter, Butternut
1 tbsp Curry Powder
6 cup Chicken Stock
2 tbsp Pure US Grade A Clover Honey

Recipe Directions for Butternut Squash Curry Soup

  1. Start by pealing and cutting your butternut squash into smallish cubes, and then set aside.

  2. Chop garlic and onions to desired sized. Heat the olive oil in a large stock pot and add garlic and onions when hot.

  3. Cook these two until the onions are well cooked, and then add the butternut squash.

  4. Stir for about 30 seconds before adding the stock.

  5. When you have added the broth, add in your curry powder as well. I actually use more curry powder than what is listed, but the original recipe called for just that much. If you want to add a little variety to the broth, add some cinnamon, nutmeg, and garam masala to the mix.

  6. Reduce heat and let soup simmer for about 20 minutes, or until the squash is soft.

  7. Add in the honey and stir.

  8. Once the squash is done, I like to use a potato masher to get it to my desired consistency, but you can also use a blender or food processor if you prefer creamier soup.

  9. I highly suggest topping off your bowl of soup with a spoonful of greek non-fat yogurt.
