Butternut Squash Curry (recipe from the Harcombe Diet by Zoe Harcombe) NB on the Harcombe diet, don't serve with rice or bread. It's surprisingly satisfying on its own.

Recipe Ingredients for Butternut Squash curry (Harcombe diet recipe)

1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, crushed
1 tsp turmeric
1 tsp cumin
1 tsp paprika
1 tsp coriander
1 tsp chilli powder
400 ml chopped tomatoes in juice
250 ml water
50 g coconut cream
150 g carrots, peeled and chopped
100 g cauliflower florets
150 g courgettes, chopped
50 g baby corn, cut into chunks
50 g green beans, cut into chunks
400 g butternut squash, peeled and deseeded

Recipe Directions for Butternut Squash curry (Harcombe diet recipe)

  1. Heat olive oil, cook onions and garlic until soft, add spices and fry for two minutes.

  2. Add tomatoes and stock, bring to boil, simmer and cool, then blend.

  3. Stir in the coconut, add the veg, put lid on saucepan and simmer for 30 minutes.
