Butternut squash, corn and tofu blended with coconut cream and a touch of curry seasoning.

Recipe Ingredients for Butternut squash and corn bisque

2 T Olive Oil
2 lbs butternut squash
32 oz chicken broth
1 cup yellow onion
8 oz silken tofu
12 oz frozen corn
1 cup coconut cream
1 T dried basil
2 T brown sugar
2 T curry powder
1 tsp sesame oil
1/2 tsp salt

Recipe Directions for Butternut squash and corn bisque

  1. Peel and cube one large butternut squash, or use 2 lbs of frozen.

  2. Heat corn in microwave according to package instructions.

  3. Saute squash and onion in olive oil until soft.

  4. Add the corn and stir.

  5. Add the silken tofu and stir, smashing the tofu.

  6. Add the broth and coconut cream (milk, soymilk, or other dairy substitute will work).

  7. Bring to simmer. Remove pot from heat and blend using an immersion blender.

  8. Return pot to heat and add the basil, brown sugar, curry powder, salt, and sesame oil.

  9. Optional, add ground red pepper for color and heat.
