a little cakey, and I'd let the squash sit on some coffee filters for a few minutes to let some of the excess water out, (and yes, some of the nutrients...), as the dough is too soft and cooks up too cakey. OK flavor. Maybe try all brown sugar. Maybe add some oats. Maybe try adding a little honey if you can get enough of the water off the squash...

Recipe Ingredients for butternut squash chocolate chip cookies

1 cup butter
3/4 cup brown sugar
1 1/4 cup sugar
2 tsp vanilla
1 cup butternut squash
1 cup eggbeaters
1 3/4 cup whole wheat flour
1 3/4 cup spelt
1 cup flour
2 tsp salt
2 tsp baking soda
3 cups chocolate chips

Recipe Directions for butternut squash chocolate chip cookies

  1. cream butter and sugar(s)

  2. add vanilla, squash and eggbeaters and continue mixing

  3. sift remaining flours and dry ingredients together

  4. add about 1 cup at a time

  5. add chips andmix thoroughly

  6. bake at 375 for 12 minutes

  7. (cookies do not spread too far due to less fat, so less melting)
