easy sweet butternut casserole-great side dish for any cold winter day.

Recipe Ingredients for butternut squash casserole

3 lbs butternut squash, cooked and mashed
1/2 c brown sugar
1/4 c butter, softened
2 eggs
6 oz evaporated milk
1 tsp vanilla
1 c cereal, rice krispies
1/2 c brown sugar
1/2 c nuts
1/4 c butter

Recipe Directions for butternut squash casserole

Cream brown sugar & butter together, add eggs and milk, mix well, pour into mashed squash, mix well, pour into greased 8x8 glass pan, cook @ 350 for 60 minutes (or until knife in center comes out clean). Mix rice krispies, nuts and sugar together, pour melted butter into mixture, spread over casserole and return to over under broiler until bubbles.
