Recipe Ingredients for Butternut Squash Casserole 3

2 cups apples, tart sliced
1 tablespoon sugar
2 tablespoons butter, divided
1 cup butternut squash, mashed cooked
1 teaspoon brown sugar
1/8 teaspoon salt
1 dash white pepper
1/2 cup cornflakes, coarsely crushed
2 tablespoons chopped pecans
2 tablespoons brown sugar
2 teaspoons butter, melted

Recipe Directions for Butternut Squash Casserole 3

  1. In a large skillet, saute apples and sugar in

  2. 1 tablespoon butter for 4-5 minutes or until

  3. crisp-tender. Place in a 1-qt. baking dish

  4. coated with cooking spray; set aside.

  5. In a small bowl, combine the squash, brown sugar, salt, pepper and remaining butter; spoon over apples.

  6. Combine cornflakes, pecans, brown sugar and

  7. melted butter ; sprinkle over casserole.

  8. Bake, uncovered, at 350 for 15-20 minutes or until heated through and topping is browned.

  9. Yield: 3 servings. Prep/Total Time: 30 min.
