Tasty baked tostado w/ healthy vegetarian fillings (note: recipe nutrition facts include regular cheddar cheese- I use low fat, 2% and/or reduced sodium shredded cheddar- which improves the health analysis).

Recipe Ingredients for Butternut Squash and Black Bean Tostados

2 cups butternut squash
2 cups black beans
3 tortilla medium
1/2 cup Cheddar Cheese
3 peppers
1/2 cup Cream, Sour, Reduced Fat, Cultured
4 tablespoons taco sauce

Recipe Directions for Butternut Squash and Black Bean Tostados

  1. Layer beans and squash on first tortilla

  2. top w/ 1/2 of cheese and add next tortilla

  3. Add second layer of squash and beans then top w/ last tortilla.

  4. Add remaining cheese and peppers.

  5. Bake in 400 degree oven for 25-35 min.

  6. Cut into 4 pieces

  7. Garnish w/ Sour Cream and taco sauce
