Recipe Ingredients for butternut squash + black bean burrito

300 g butternut squash
200 g sweet potato
1/2 cup uncooked brown rice
2 cloves garlic
1 red bell pepper
1/4 green bell pepper
2 tsp ground cumin
1/4 tsp cayenne pepper
100 g uncooked black beans
20 g cheddar cheese

Recipe Directions for butternut squash + black bean burrito

  1. Chop and roast butternut squash and sweet potatoe for 25mins approx.

  2. Cook rice

  3. Saute onion and garlic for 5 mins then add seasonings and stir.Add chopped peppers, black beans and cooked rice. Saute for another 10 mins on low.

  4. Add squash and potatoe to pan and stir well, mashing a bit. Add cheese and heat for another couple of minutes.

  5. Serve with tortilla and any other toppings.
