Recipe Ingredients for Butternut Squash Bisque

0.5 serving Butternut Squash bisque

Recipe Directions for Butternut Squash Bisque

  1. Preheat oven to 400 degree

  2. combine dry ingredients in bowl

  3. Place squash and garlic cloves in deep bowl

  4. Sprinkle dry ingredient mixture over squash and mix.

  5. add Olive oil and coat all squash

  6. Lay squash and garlic in baking dish in one layer, place in preheated oven.

  7. Roast for 45 minutes or until soft.

  8. Remove from oven and let cool for 10 - 15 minutes

  9. Put 1/3 of squash in blender or food processor with 1/3 of broth. Puree until smooth, adding 1/3 of half & half while blending.

  10. Continue to add remaining squash, broth and half & half while blending until smooth and reach desired consistency. Blend in honey to taste.

  11. Can be topped with green onion, reduced fat sour cream, sprinkle of cinnamon or whatever you'd like.
