Butternut squash soup with potato and half and half

Recipe Ingredients for Butternut Squash Bisque

140 g onions
420 g butternut squash
5 cups Organic Low Sodium Chicken Broth
113 g potatoes
1 tsp paprika
1/2 cups fat free half and half
8 oz chicken breast, raw

Recipe Directions for Butternut Squash Bisque

  1. Cook onions until soft.

  2. Add squash, chicken broth, potatoes and paprika. Bring to a boil. Simmer for about 35 minutes, covered until the squash and potatoes are soft and chicken is cooked.

  3. Process until smooth with blender. Add half and half. Reheat slowly.

  4. Can stir in chopped chives just before serving (1.5 TBSP)
