A delicious and fairly nutritious soup.

Recipe Ingredients for Butternut Squash Bisque

4 cups butternut squash
1 tbsp unsalted butter
1 tsp salt
1/2 cup onion
1 tsp pepper
1 tbsp nutmeg
1 tbsp olive oil
3/4 cup carrots
1/2 cup heavy cream
4 cups chicken broth
1/4 cup pineapple juice

Recipe Directions for Butternut Squash Bisque

  1. Cube 4 cups worth of butternut squash. dice onions and carrots.

  2. Put oil & butter in bottom of pot, throw in onions and let them simmer for a while until translucent.

  3. Add carrots, squash, chicken broth, salt, pepper, nutmeg, and pineapple juice. (pineapple juice is optional, or substitutable with other acidic juice like Orange)

  4. Boil for 35-40 minutes.

  5. Cool for a while, mix in blender until finely puree'd. Add water to reduce consistancy to a thick creamlike soup.

  6. Heat, then add cream & mix in. Serve hot with a fresh dash of nutmeg on top. *Replace heavy cream with half and half to reduce fat & saturated fat without sacrificing too much flavor.

  7. Servings should equal out to approximiately 1 1/2 cups each.
