Creamy but healthy winter squash soup

Recipe Ingredients for Butternut Squash Bisque

3 lb butternut squash
6 cups low sodium chicken stock
3 tbsp olive oil
1/2 yellow onion

Recipe Directions for Butternut Squash Bisque

  1. Cut two butternut squash in half lengthwise and deseed.

  2. Coat in thin layer of olive oil

  3. Bake in oven at 350 until squash is soft.

  4. Saute yellow onion in olive oil.

  5. Add any spices you want (sage, pancetta or whatever...)

  6. Add softened squash and chicken stock (3 cups)

  7. Simmer for 30 min

  8. Puree, and dilute to desired consistency with rest of warm chicken stock.

  9. Can be frozen
