Soup of butternut squash, apple, milk and cream

Recipe Ingredients for Butternut Squash Bisque

24 ounces butternut squash
1 tablespoon butter
1 small onion
1 medium apple
16 ounces chicken broth
1/4 cup milk
1/8 cup light cream

Recipe Directions for Butternut Squash Bisque

  1. Roast squash at 450 for 1/2 hour

  2. Melt butter in saucepan

  3. peel and chop onion apple and ginger

  4. saute onion apple and ginger in butter until soft

  5. add butternut squash, and dash of curry powder, nutmeg, and cinnamon

  6. add chicken broth

  7. simmer until tender about 25 minute

  8. blend with hand held blender or in blender
