Recipe Ingredients for Butternut Squash Bisque

4 cups butternut squash
3 cups Pacific Natural Foods Organic Vegetable Stock
3/4 cups carrots
1/2 cups onions
1 tablespoon extra virgin olive oil
1 tablespoon smart balance oil
1 tablespoon butter, without salt

Recipe Directions for Butternut Squash Bisque

  1. Cut butternut squash in half, scoop out seeds, and spread some EVOO on each side. Then, place face down on a ungreased baking sheet and bake at 350 degrees for about 45 min to 1 hour or until tender. Scoop out the butternut squash and set aside.

  2. Put a large pot over medium heat and add unsalted butter and oil.

  3. Add onions to the oil and cook until tender.

  4. Add carrots, butternut squash, and vegetable broth, bring to a boil, then turn down heat to a simmer until the carrots are tender.

  5. Transfer ingredients to a blender and puree until smooth.

  6. Return to pot for more heating if the soup is not hot enough.
