My sister's recipe. Really good and easy to make! Her recipe calls for butternut squash, but I'm sure you can also do acorn, spaghetti or another heavy winter squash. I actually used vegetable broth instead as I didn't have chicken on hand... it would be very easy to substitute to make this vegetarian or kosher.

Recipe Ingredients for Butternut Squash Bake

1 medium squash, winter, peeled, seeded and diced
3 tablespoons extra virgin olive oil, divided
1/2 cup onion, chopped
2 tablespoons grated parmesan cheese
1/4 cup chicken broth, reduced sodium

Recipe Directions for Butternut Squash Bake

  1. Preheat oven to 425 degrees.

  2. In an oven-safe dish toss squash with half the olive oil. Bake for 20 minutes.

  3. Remove from oven, add onions, remaining oil and salt and pepper to taste. Toss. Return to oven and bake for another 20 minutes.

  4. Remove from oven and transfer squash/onion mixture to a serving dish. Drizzle chicken broth over an toss.

  5. Top with cheese and serve.
