Recipe Ingredients for Butternut Squash & Bacon Risotto

3 cups Risotto
6 cloves garlic
1 medium white onion
3 T Olive oil
3 1/2 cups Chicken broth
1 lb. Turkey bacon
2 cups Squash Butternut

Recipe Directions for Butternut Squash & Bacon Risotto

Cook bacon and drain. Set aside. Squash should be precooked and set aside. In large skillet, add olive oil, onion and minced garlic, slowly saute until onion is cooked. Add rice and toast slowly. Slowly add chicken broth. Cook over low heat stirring frequently until rice has absorbed moisture. Add water if necessary. When rice is close to finished, add bacon and squash. Cook on low heat until heated through.
