Toasted butternut squash and savory bacon combined with penne pasta and a home made cream sauce. One of my favorite Fall/Winter comfort foods!

Recipe Ingredients for Butternut Squash and Bacon Pasta

2 tablespoons Extra Virgin Olive Oil
12 oz. bacon
16 oz. penne rigate
24 oz. butternut squash
1 tablespoon dried rosemary
1 teaspoon salt
1/2 teaspoon ground pepper
1/4 cup flour
1 cup milk
6 oz. provolone cheese
1/3 cup parmesan cheese

Recipe Directions for Butternut Squash and Bacon Pasta

  1. Cut butternut squash into 1" cubes and spread over cookie sheet. Sprinkle with rosemary, salt and pepper. Drizzle with Olive oil and toss lightly. Bake for 45 minutes at 375 degrees, turning halfway through baking time.

  2. Cook and crumble bacon, reserving enough grease to cover the bottom of the skillet. Add 1/4 cup flour to the pan and whisk together for about 1 minute. Slowly add milk and continue stirring until it is somewhat thick and completely smooth. Add provolone cheese and stir until melted.

  3. Cook pasta while bacon is cooking. Drain and return to pot.

  4. Add squash, bacon and cream mixture to pasta and toss well. Pour into 9x13 pan and sprinkle with parmesan cheese. Bake for 25 minutes or until bubbly and cheese is browned.
