Recipe Ingredients for butternut squash back

1 small squash,butternut, peeled, seeded, and cubed (@2 cups)
1/2 cup mayonnaise
1/2 cup onion, finely chopped
1 egg, lightly beaten
1 teaspoon sugar
1 salt
1 pepper
1/4 cup saltines, crushed
2 tablespoons parmesan cheese, grated
1 tablespoon butter, melted

Recipe Directions for butternut squash back

  1. Place squash in a sauce pan and cover with water; bring to a boil.

  2. Reduce heat; cover and simmer for 20-25 min or until very tender.

  3. Drain well and place in a large bowl; mash squash. In another bowl, combine the mayonnaise, onion, egg, sugar, salt to taste and pepper to taste; add to the squash and mix well.

  4. Transfer to a greased 1-qt. baking dish. Combine cracker crumbs, cheese and butter; sprinkle over top. Bake, uncovered, at 350 degrees for 30-40 minutes or until heated through and top is golden brown.

  5. REDUCED FAT AND FAT FREE MAYONNAISE ARE NOT RECOMMENDED FOR THIS RECIPE!!!!!!
