Recipe Ingredients for Butternut squash au gratin

2 lbs butternut squash, shredded
1 med onion, chopped
1/2 tsp salt
1/4 tsp pepper
2 tbsp butter
2 eggs
3/4 cup milk
3/4 cup swiss cheese, shredded

Recipe Directions for Butternut squash au gratin

  1. Peel and shred squash, chop onions and mix in a large bowl with butter, salt and pepper. Pour into 9x9 greased casserole dish and bake, covered, for 30 mins.

  2. Mix eggs, milk and cheese, pour over squash mix and bake uncovered for another 20 -30 mins til golden brown.
