Squash Soup with apple and ginger

Recipe Ingredients for Butternut Squash Apple Soup

6 cup, cubes Squash, Winter, Butternut
2 1tsp Olive Oil
1 medium raw Onion Yellow
2 cloves, raw Garlic
3 tsp Ginger Root
32 fl oz Organic Low Sodium Chicken Broth
3 medium (3") Apples
4 fl. oz jersey farms yogurt 0% (2/3 cup)
1 sweetpotato, 5" long Sweetpotato

Recipe Directions for Butternut Squash Apple Soup

  1. Sautee in oil or roast: onion, garlic, ginger, squash, apples, sweet potato

  2. ( If sauteeing, sautee onion, garlic, apples, ginger then add Squash)

  3. Puree and add chicken broth.

  4. Season with cumin, pepper, cinnamon and ( if desired) curry powder
