Recipe Ingredients for Butternut Squash and Apple Soup

1 large squash, winter, butternut, peeled an sliced in a processor
2 medium green apples, peeled and sliced
2 medium carrots, peeled and sliced
1 large red onion, diced finely
4 cloves garlic, diced finely
1 quart chicken broth or veg broth for vegetarian
2 tbsp olive oil
1 tbsp onion powder
1 tbsp garlic powder
1 tbsp coriander
1 tbsp cinnamon
2 tbsp salt
1 tbsp black pepper
3 tbsp ground sage or 10 leaves fresh sage, chiffonade
6 slices whole wheat bread
3 tsp cinnamon
2 tbsp margarine
20 tbsp reduced fat sour cream

Recipe Directions for Butternut Squash and Apple Soup

  1. In a large soup pot. saute onion and garlic in the oo. Add sliced carrot, cook a little to soften. Add the squash and apple. Add the stock or broth. Add the seasonings except the sage if using fresh- add that at the end. Also added bullion cubes, crumbled- they couldn't find it in the database. Cook until squash is soft and gets thick. Puree half of the soup and all the carrots if u can find them. add back to the soup for a little texture or puree whole thing for velvety smooth soup.

  2. Fry the bread with the margarine on both sides (great for crusts and I used Arnold 12-grain bread) sprinkle with cinnamon. Can garnish with fried sage leaves- cut bread into "croutons" and dollop 2 T of sour cream in middle before serving.
