Butternut squash soup for cold days.

Recipe Ingredients for Butternut Soup

4 cups butternut squash
3 carrots
2 potatoes
1 stalk celery
1 leek
1 onion
2 cloves garlic
32 ounces vegetable broth
1 tablespoon olive oil

Recipe Directions for Butternut Soup

  1. Cook vegetables in olive oil for about 5 minutes or until lightly browned.

  2. Add the vegetable broth, bring to a boil, then reduce heat and simmer for about 40 minutes or until all the vegetables are tender.

  3. Blend until smooth.

  4. Add salt and pepper to taste.
