Simple, healthy butternut squash soup.

Recipe Ingredients for Butternut Soup with Cumin and Coriander

1 tbsp. olive oil
1 1/2 lbs. butternut squash, cubed
2 med. onions, chopped
8 cloves garlic, minced
3 c. chicken broth
1/4 tsp. crushed red pepper
1/2 tsp. chili powder
1 tbsp. coriander
2 tsp. cumin

Recipe Directions for Butternut Soup with Cumin and Coriander

  1. Cook onions and garlic in olive oil til golden. Add broth. Bring to a boil

  2. Add squash and remaining ingredients. Simmer, covered, until squash is softened, 20-25 minutes.

  3. Puree with a stick blender. Add salt and pepper as needed. Serve with a dollop of Greek yogurt.
