Moist, golden muffins with a hint of spice and nuts - you'd never think they had pumpkin in them!

Recipe Ingredients for Butternut muffins

400 g butternut squash
400 g brown sugar
4 eggs
300 g flour
175 ml olive oil
30 g almonds
2 teaspoons baking soda
1 teaspoon cinnamon

Recipe Directions for Butternut muffins

  1. Whizz the butternut (you can leave the skin on) in the food processor til fine.

  2. Add the sugar, eggs, flour, oil, nuts, baking soda and cinnamon, and whizz til blended.

  3. Pour into muffin tin lined with paper cases or greased.

  4. Bake at 180 degrees Celsius for 20 minutes.

  5. NOTE: You can keep the batter in the fridge for 24 hours - so bake half today and half fresh tomorrow!

  6. Ice with passionfruit icing if you want.
