Recipe Ingredients for butternut & broccoli rabe soup

2 1/2 lbs butternut squash
1 tbsp salt
1/2 lbs broccoli rabe
2 quarts

Recipe Directions for butternut & broccoli rabe soup

  1. toss chunks of butternut squash in olive oil with salt & pepper

  2. roast the butternut squash in a 375 degree oven for 30 minutes

  3. working in batches, blend with 1 qt vegetable stock and add to a soup pot

  4. add 2 bay leaves, 1 tsp ground cumin, 1 tsp white pepper and 1 qt vegetable stock and bring to boil

  5. in a frying pan, heat 3 tbsp olive oil with 1 tsp red pepper flakes over medium-high heat, add cut up broccoli rabe

  6. cook the broccoli rabe for 4 minutes, stirring constantly

  7. when the soup begins to boil, add the broccoli rabe and cook over low heat for 10 minutes
