Creamy non-dairy butternut squash soup

Recipe Ingredients for Butternut Bisque

1/4 cup olive oil
2 cup carrots
1/2 cup leeks
3 lbs butternut squash
1 cups broth
2 tbsp garlic

Recipe Directions for Butternut Bisque

heat olive oil, garlic, ginger. add carrots and leeks until leeks are softened. Add diced BN squash and stir for 10 minutes. Add 4 cups veg stock and bring to a boil, then let simmer for 15 minutes until all veg are soft. Puree and serve!
