A comforting and tasty autumn soup.

Recipe Ingredients for Butternut Bisque

2 tablespoons butter
1 large onion, diced
1 cup diced carrot
1 clove garlic, pressed
1 cup fat free low sodium chicken broth
2 cups cooked butternut squash, boiled
1/2 cup fat free yogurt
1 cup evaporated milk or additional yogurt
1 teaspoon ground nutmeg
2 tablespoons maple syrup

Recipe Directions for Butternut Bisque

  1. In a large pot saute diced onion, pressed garlic, and carrot on low until the onion is translucent and carrots are soft, about 5 minutes.

  2. Add chicken broth. Cover and simmer on medium heat for about 10 minutes.

  3. Add butternut squash, yogurt, evaporated milk, nutmeg and maple syrup to the pot. Stir until mixed.

  4. For a smooth soup, run small batches at a one time through a food processor.

  5. Garnish with chopped chives.
