Pureed butternut squash & carrot soup

Recipe Ingredients for butternnut squash carrot & ginger soup

1.5 cup cubed Squash Butternut
3 NLEA serving Carrots, Baby
6 tbsp chopped Onions
2 tsp Ginger Root
3 clove Garlic
0.5 apple Mini Chefs Pink Lady Apples
3 cup Soup, Chicken Broth
2 tsp Curry Powder

Recipe Directions for butternnut squash carrot & ginger soup

saute onion, add garlic ginger for one minute. Add carrots and butternut squash, cut into cubes. Saute for 4-5 mins. Add chicken or vegetable stock to cover all vegetables. Bring to boil, reduce heat, cover, and cook for 20 mins. Add curry powder. Use an immersion blender or reg. blender to puree when it's cooled a little. Salt & pepper to taste.
