This recipe is a healthy alternative to waffles made from all white flour.

Recipe Ingredients for Buttermilk Whole Wheat Waffles

1/2 cup whole wheat flour
1/2 cup unbleached white flour
1 T. cornmeal
1/2 tsp salt
1/2 tsp. baking soda
1 egg
1 cup buttermilk
2 1/2 T. canola oil

Recipe Directions for Buttermilk Whole Wheat Waffles

  1. Preheat waffle iron.

  2. In a medium bow, sift or whisk together the flours, cornmeal, salt, and baking soda.

  3. In a separate bowl beat the egg yolk, buttermilk, and canola oil, then gradually add to the flour ingredients to form batter.

  4. In another bolw whip the egg whites till the are stiff. Fold the into the batter. Batter should look lumpy.

  5. Spoon batter inot waffle iron and cook till golden brown.
