Basic recipe with 40% whole wheat flour.

Recipe Ingredients for Buttermilk Waffles

2/3 cups unbleached flour
1/3 cup whole wheat flour
2 large eggs
1 tbsp. light brown sugar
1 cup buttermilk, low fat
2 1/2 tbsp. unsalted butter
1 tsp. baking powder
1/2 tsp. baking soda
1/8 tsp. salt

Recipe Directions for Buttermilk Waffles

  1. Whisk together dry ingredients.

  2. Whisk in egg yolks and buttermilk. Buttermilk quantity is approximate. Add until the batter is like a heavy custard.

  3. Beat egg whites until they are stiff.

  4. Add melted butter and beat batter for 4 minutes.

  5. Fold in egg whites.

  6. Bake in a waffle iron.
