Got this off a cereal box; don't remember which one any more. Have with a piece of fruit and some lowfat cream cheese, yum.

Recipe Ingredients for Buttermilk Raisin Bran Muffins

1 cup
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1/4 cup sugar
1/4 cup olive oil
1 cup
1 egg
3 cups
1/2 cup walnuts

Recipe Directions for Buttermilk Raisin Bran Muffins

  1. Beat the egg slightly and mix with the moist ingredients.

  2. Add the raisin bran and allow to soak about 3 minutes.

  3. Sift together the dry ingredients.

  4. Add the dry ingredients to the moist and stir lightly to moisten.

  5. Put into large or standard muffin cups. I made seven large muffins to produce the nutrition profile seen here (it would have gone into 6).

  6. Bake at 375 degrees for large muffins, or 400 degrees for standard muffins, about 20 minutes. Test with finger or toothpick before removing from oven.
