Double the recipe for a bundt cake. I halved it for small individual bundt cakes. NOTE: It's better with fresh lemon and zest.

Recipe Ingredients for Buttermilk Pound Cake

1 1/2 cups flour
1/8 tsp. baking soda
1/4 tsp. salt
1/2 cup butter
1 cup Splenda
1/2 cup sugar
3 eggs
1 tsp. lemon extract
1 tsp. vanilla extract
3/4 tsp. ground cardamom
1/2 cup buttermilk

Recipe Directions for Buttermilk Pound Cake

  1. Preheat oven to 325 degrees.

  2. Mix together the flour, baking soda, and salt.

  3. Beat butter and sugar. Mix in the eggs, one at a time beating well after each addition.

  4. Stir in the lemon and vanilla.

  5. Gently mix in flour alternately with the buttermilk. Pour into prepared pan.

  6. Bake 90 min. (less for small cakes). When cake begins to pull away from side of pan it is done. Let cool for 10 min. in pan then on wire rack and cool completely.
